Masoor Dal / Red Lentil

Masoor Dal, known internationally as Red Lentil, is one of the world's oldest and most widely consumed pulses — a fast-cooking, high-protein legume that forms the staple protein base across South Asia, the Middle East, and increasingly the Western health-food market. When the brown-skinned whole lentil is dehulled and split, it reveals the bright orange-to-red interior prized for its quick 10–15 minute cook time and creamy texture in dals, soups, and purées.

India is the world's largest producer of lentils, cultivating roughly 1.2 million MT annually, primarily as a Rabi (winter) crop in Madhya Pradesh and Uttar Pradesh. The split red lentil requires no soaking, breaks down into a smooth consistency, and carries 24–26% protein, making it a cornerstone ingredient for both traditional cooking and the booming plant-based protein industry. Its mild, earthy flavour and rapid cooking make it the most versatile lentil in global trade.

Globally, red lentils trade in three tiers: premium fast-cooking split grades (such as Red Chief, used in hummus and health foods), standard split grades for food processing and retail, and whole red lentils for traditional cooking and feed. India differentiates on diaspora loyalty, the premium Red Chief grade, and cleaner glyphosate residue profiles compared to bulk-export origins like Canada.

Red lentils sit at the intersection of two powerful demand streams: the traditional South Asian diaspora staple market and the Western plant-based protein boom. India, as the largest producer and consumer, supplies premium fast-cooking grades while differentiating on diaspora trust and glyphosate-clean residue profiles.
