Ajwain (Trachyspermum ammi), commonly called carom seed or 'Bishop's weed', is a small, ridged, khaki-coloured seed-like fruit from a plant of the Apiaceae (parsley/cumin) family. Though resembling caraway or cumin in appearance, its flavour is unmistakable — sharply herbaceous and dominated by thymol, the same aromatic compound found in thyme, which gives ajwain its intense, almost medicinal pungency.

India is overwhelmingly the world's dominant producer and exporter of ajwain, with Rajasthan, Gujarat and Madhya Pradesh forming the core cultivation belt. The semi-arid climate of these states produces seed with a high thymol concentration, the single most prized quality parameter. There is no major rival origin — India effectively supplies the global ajwain trade, making it a uniquely Indian-controlled spice category.
