Brown cardamom (Amomum subulatum) — also known as black cardamom, large cardamom, or 'badi elaichi' — is botanically distinct from the green cardamom of the Western Ghats. The plant grows under forest shade in the eastern Himalayas, and its large reddish-brown pods are harvested in clusters, then dried over wood fire in traditional 'bhatti' kilns. This direct smoke-curing imparts the spice's signature smoky, camphoraceous, resinous aroma that no other cardamom possesses.

India is the world's largest producer of large cardamom, with Sikkim accounting for the dominant share alongside the Darjeeling hills of West Bengal and pockets across Arunachal Pradesh, Nagaland, and Assam. The cool, humid, shaded slopes of the Sikkim Himalaya at 600–2,000 metres are ideal for the crop, and the region's smoke-kiln curing tradition defines the benchmark flavour profile sought by spice houses worldwide.

Unlike green cardamom, which is used in sweets and desserts, brown cardamom is a savoury workhorse. Whole pods are essential to North Indian garam masala, Mughlai gravies, biryani, pilaf, and slow-cooked meat dishes, where they release a deep smoky base note. The dominant aroma compound is 1,8-cineole (eucalyptol), and the spice carries 2–3% volatile oil. Brown cardamom commands a strong niche position because Sikkim's smoke-cured large pods have no genuine substitute in authentic South Asian cuisine.
