Gherkins fall under two distinct customs lines: fresh cucumbers and gherkins under HS 0707.00, and prepared/preserved gherkins in vinegar or acetic acid under HS 2001.10 — the dominant export code. The EU (Germany, France, Belgium, Spain), the USA, Russia and Japan together absorb the bulk of Indian output, with importers valuing India for low landed cost, consistent calibre grading and the scale that no other origin can match.

Japan maintains some of the world's most stringent food safety and residue standards, enforced by the Ministry of Health, Labour and Welfare (MHLW) under the Food Sanitation Act.
