About Nutmeg
Nutmeg is the dried seed kernel of the tropical evergreen tree Myristica fragrans, which uniquely yields two distinct spices: nutmeg (the hard inner seed) and mace (the bright red, lacy aril that wraps the seed). After harvest the fruit is split, the mace peeled off and dried separately, and the seed dried in its shell for several weeks before the brittle shell is cracked to release the brown, oval nutmeg kernel. Nutmeg is rich in volatile oil (6.5–15%) containing sabinene, alpha-pinene and the characteristic compound myristicin, giving it a warm, sweet, woody-spicy aroma.
In India, nutmeg is cultivated almost entirely in Kerala — the Thrissur, Ernakulam, Kottayam and Idukki belt of the Western Ghats — with smaller plantings in Tamil Nadu and Karnataka, usually intercropped within coconut and arecanut gardens. Kerala is India's key nutmeg-growing region, and Indian processors grade kernels by count and quality, separate sound from BWP (broken, wormy, punky) lots, and value-add into whole nutmeg, ground nutmeg powder, mace (javitri) and nutmeg/mace oil and oleoresin.
