India is the world's second-largest potato producer (after China), growing 55–60 million tonnes annually across the Indo-Gangetic plains. Potato is a temperature-sensitive commodity. Tubers stored or shipped warm sprout and shrivel, while exposure below 2°C converts starch to sugar (cold sweetening), darkening the fryer colour. Successful export therefore depends on an unbroken cold chain from cold store to reefer container, careful curing of the skin, and tight control of greening, mechanical damage and soil tare.
Compliance & Quality Standards for Japan
Japan maintains some of the world's most stringent food safety and residue standards, enforced by the Ministry of Health, Labour and Welfare (MHLW) under the Food Sanitation Act. All food imports are subject to inspection by Japan's quarantine stations and must comply with Japan's Positive List system for agricultural chemical residues, which sets MRLs far more stringent than Codex standards for many substances.
