Indian export potatoes split into two commercial streams. Table-grade tubers โ dominated by Kufri Pukhraj, Kufri Bahar, Kufri Jyoti and Kufri Chandramukhi โ serve fresh consumption demand in Nepal, Sri Lanka and the Gulf. Processing-grade tubers with high dry matter and low reducing sugars โ notably Kufri Chipsona-1/3, Kufri FryoM (FC-5) and Lady Rosetta โ feed the rapidly growing chips and french-fry industry, with Gujarat emerging as India's processing-potato hub around Deesa and Banaskantha.
Potato is a temperature-sensitive commodity. Tubers stored or shipped warm sprout and shrivel, while exposure below 2ยฐC converts starch to sugar (cold sweetening), darkening the fryer colour. Successful export therefore depends on an unbroken cold chain from cold store to reefer container, careful curing of the skin, and tight control of greening, mechanical damage and soil tare.
