What is Potato?

India is the world's second-largest potato producer (after China), growing 55โ€“60 million tonnes annually across the Indo-Gangetic plains. Uttar Pradesh and West Bengal alone account for over half of national output, with Gujarat, Punjab and Bihar completing the major belts. The bulk of India's potato exports move from the western ports of Mundra and Pipavav to neighbouring and Gulf markets.

Indian export potatoes split into two commercial streams. Potato is a temperature-sensitive commodity. Tubers stored or shipped warm sprout and shrivel, while exposure below 2ยฐC converts starch to sugar (cold sweetening), darkening the fryer colour.
