Potato is a temperature-sensitive commodity. Tubers stored or shipped warm sprout and shrivel, while exposure below 2°C converts starch to sugar (cold sweetening), darkening the fryer colour. Successful export therefore depends on an unbroken cold chain from cold store to reefer container, careful curing of the skin, and tight control of greening, mechanical damage and soil tare.
