Chana Dal

Chana Dal is the split, dehusked form of the desi (brown) chickpea (Cicer arietinum) — the small, dark, irregular Bengal gram variety native to the Indian subcontinent. When the whole desi chickpea is milled, its dark seed coat is removed and the cotyledon is split into two golden-yellow halves, yielding the dense, nutty-flavoured dal that anchors everyday South Asian cooking. Distinct from the larger pale Kabuli chickpea eaten whole, desi-derived chana dal is prized for its high protein, low glycaemic index and rapid digestibility.

India is the world's largest producer and consumer of chickpeas, growing 11–12 million MT annually as a Rabi crop concentrated in Madhya Pradesh, Maharashtra, Rajasthan and Karnataka. Despite this dominance, India also imports desi chickpea — chiefly from Australia — to bridge domestic milling demand. Chana dal carries roughly 22–24% protein and is the raw material not only for cooked dal but for besan (gram flour), the foundation of countless snacks, batters and sweets across the diaspora food economy.

Globally, chana dal trades in tiers defined by milling quality and polish: premium machine-cleaned, double-polished split for branded diaspora retail; standard split for foodservice and besan milling; and lower grades carrying higher broken and admixture for bulk processing. India differentiates on the authentic desi chickpea base, deep milling capacity, enormous besan-linked demand and unmatched diaspora brand loyalty against rival origins such as Australia and Myanmar.

Chana dal sits at the heart of the South Asian protein economy, serving both the daily-dal staple market and the enormous besan / gram-flour ecosystem. India, as the largest producer, consumer and miller, dominates supply while differentiating on milling depth and diaspora brand trust against export rivals Australia and Myanmar.
