Mustard seed is one of India's most important oilseed and spice crops, harvested from the Brassica family of plants. Two distinct commercial types dominate the export trade: yellow (white) mustard (Brassica/Sinapis alba) with its milder, pungent-sweet profile used in condiments and pickling, and brown/black mustard (Brassica juncea) — known locally as 'rai' or 'sarson' — which carries the sharp, biting pungency from allyl isothiocyanate that defines Indian, Bangladeshi, and South Asian cuisine.

India is among the world's largest producers of rapeseed-mustard, with cultivation concentrated in the rabi (winter) belt of Rajasthan, Uttar Pradesh, Haryana, Madhya Pradesh, and Gujarat. Indian mustard seed is prized for its high oil content (typically 38–42%), which makes it a dual-use commodity — valued both as a whole spice for tempering (tadka) and pickling and as the principal feedstock for India's beloved pungent mustard (sarson) cooking oil. Rajasthan alone accounts for nearly half of India's mustard output.

While Canada and Nepal dominate the global yellow mustard condiment trade and Ukraine supplies European processors, Indian brown mustard occupies a distinct niche — its higher allyl isothiocyanate (AITC) and oil content make it the preferred origin for South Asian diaspora markets, deggi/spice blenders, and buyers seeking authentic pungency. Indian mustard's oil-content advantage also makes it competitive feedstock for crushing and oleochemical use.
